Cover the pan and let it cook for about 20 minutes. This time will allow the carrots to soften and become tender enough.

The final process in the preparation of carrot and coriander soup is to tip it into a food processor together with the handful of coriander followed by blitzing until it is smooth. This should be carried out in two batches to achieve a more satisfying result. Once you are done with that, return the soup back into the pan and taste to determine whether the salt is enough.
